Orange BingoBerry Scones
OK…this one’s a keeper. I made a batch of these to take to bingo the other night and everyone wanted the recipe, so I knew I had to share it. I have no idea where this recipe originated. It was given to me by Darla Mallory the innkeeper of the Coral House Inn, a beautiful bed and breakfast in Belize. Looking out over the incredible countryside of Belize and the clear blue, green waters of the Gulf of Honduras, we enjoyed these scones every morning with fresh fruit and coffee.
1 ¾ cups all purpose flour
½ cup granulated sugar
¼ cup cornmeal
1 ½ tsp. baking powder
½ tsp salt
2 Tbs COLD butter cut into small pieces
1 Tbs grated orange zest
2/3 cup buttermilk
1 egg WHITE slightly beaten
1 cup blueberries
½ cup confectioners’ sugar
Preheat oven to 425 degrees F.
Spray a tin foil covered cookie sheet with cooking spray.
Combine flour, granulated sugar, cornmeal, baking powder, and salt.
With pastry cutter or two knives cut in butter and 2 ½ tsp orange zest (reserving ½ tsp for topping).
DO NOT over work dough. You should be able to see small chunks of butter.
Mix in buttermilk and egg white until a soft dough forms.
Gently fold in blueberries.
With floured hands, transfer the dough to a lightly floured surface.
Shape into an 8 inch round.
Cut into 8 wedges and place 2 inches apart on prepared pan.
Bake 10 – 12 minutes or until golden brown.
Cool completely.
Orange glaze: (I could eat this stuff with a spoon)
Mix confectioners’ sugar with ½ tsp reserved orange zest( I personally like a little more) and 1Tbs, ( maybe 2 Tbs depending on how thick you like the glaze) water (or OJ) until smooth.
Put the glaze into the corner of a plastic bag. Snip off just a tiny tip of the bag and pipe the orange glaze over scones.
These scones can be made with or without the blueberries. You can add nuts, raisins, chopped dried fruit if you like. This is the kind of recipe you can adjust according to what you have around the house. I made them with chocolate and peanut butter chips once. Now those were interesting.
